Big Pappa's takes the island tradition of amassing huge swaths of potatoes, pan-frying them in spices, cascading a waterfall of cheese, and garnishing it up with three to five more layers of, well, stuff, and doesn't so much add a twist, as refine the whole process to perfection. And perfection tastes pretty dang perfect when it tastes like this. Also perfection is massive, so don't bring anything resembling a full stomach to this fight. You'e gonna need every cubic inch of space.
Assuming you can agree to these terms, choose from a wide array of meets, veggies, and well, extra EXTRA cheese and aioli to spread over your spuds, and watch the plate of your starchy dreams load up in front of you. Then dig in, cause you've got work to do. It's a classic Puerto Rican staple that flies in the face of convention and rational food logic, but rational doesn't always equal sanity, especially when it tastes like this. The sane thing to really do here is to dig in. Call it taking part in tradition if you have to justify it. Just don't slow down.
