Crunch Time

This is part of an ongoing series about the start up of a food truck called NaanStop. We will be launching in the first quarter of 2011. You can follow us on Twitter, on Facebook, or email me at [email protected] with any feedback. Check back here for weekly updates!

NaanStop’s launch is now fast approaching. We have been targeting a mid-January soft launch with an official grand opening at the beginning of February. In order to hit the road by mid January, we need to take possession of our truck by the first week of January so that we can get it wrapped with our logo/design and get it returned to us in time. Because of the holidays, we assume we’ll have a tough time getting much done in the second half of December. So really, we have about a week and a half from today to finalize some big decisions.

With the soft launch about a month away, here is a list of things that need to happen:

Sign lease on a Truck

Design wrap

Website

Scout locations

Food safety certification

Finalize suppliers

Interview/hire staff

Outfit truck with supplies (dishes, utensils, etc)

Payroll service

Complete permit applications

Update food cost and revenue projections

Finalize recipes

While we can finish much of this while the truck is being wrapped in early January, securing a truck and getting the website and wrap designed are top priorities if we are to meet our target launch date. In the meantime, we keep cooking to improve recipes and try out new things. Check out the pictures of the Paneer Tikka Masala Naanwich and Samosa Chaat below.
