Lobster/Crab Fritters
Ingredients
- 1 cod fillet
- 3 oz cooked lobster meat, medium chop
- 3 oz fresh crab meat
- 2 whole eggs
- 1/2 teaspoon salt
- 1/4 teaspoon salt
- 1/2 cup grilled corn, cut off cob (optional)
- 1 tablespoon chopped chives
- ½ cup buttermilk
- 2 cups AP flour
- 2 teaspoon Baking Powder
Process
1. Sift flour and baking powder together and set aside
2. In a food processer, puree cod fillet
3. Add other ingredients to cod and blend
4. Combine wet and dry mixes
5. Deep Fry small scoops (about 1 1/2 oz) in 350 degree fat until golden brown and cooked through (around 3 minutes)
6. Serve hot with your favorite dipping sauce (we use Roast Red Pepper Tartar or Chipotle Aioli)
