Who ever thought lobster was only mean’t for fancy sit-down restaurants was truly mistaken. Fresh lobster rolls are a great dish to enjoy while soaking up the sun at the beach, at a picnic with friends and family or while jamming out at a live summer concert or festival. We’ve provided you with a quick and simple recipe for you to enjoy in any occasion, just be sure to keep that lobster chilled for optimal tasting pleasure!
(makes 2 lobster rolls)
(2) 4oz lobster tails
1 1/2 Tbsp mayonnaise
1Tbsp Old Bay seasoning,to taste
Salt and pepper, to taste
1 Tbsp chives, chopped
2 top-split buns
1. Bring salt water to a boil.
2.Place the lobster tails in the boiling water and boil for about 7 minutes or until bright red and tender.
3.After removing, spilt the tail up the middle with kitchen shears and crack to remove the meat.
4.Combine the old bay seasoning, chives and mayo in a bowl, then lightly coat the lobster chunks by folding them in.
5.Place a pat of butter in the bottom of a skillet over medium-high heat.
6.Place the buns in, coating them with the butter and cooking until they are crisp and brown.
7.Fill each roll with half of the lobster mixture and top with chives. (you can also squeeze fresh lemon juice atop the rolls as well, just do not over do it)
8. Serve immediately!
