Parisian Mumbai Salad

This past weekend The Hundred-Foot Journey, a story about the fusion of two very different cultures through a passion for food, opened in theaters nationwide. Check out this Parisian-Mumbai Salad recipe inspired by the film, that delightfully mixes the two cultures, shared with us in a Le Cordon Bleu cooking demonstration!

Chicken Marinade

1 cup plain yogurt

1 teaspoon of grated ginger

1 teaspoon of minced garlic

1 teaspoon ground cardamom

1 tablespoon of curry powder

2 (6oz.) skinless, boneless chicken breast

2 teaspoons of salt (to taste)

2 teaspoons of pepper (to taste)

Cardamom, an Indian spice used to season the chicken

4 oz. mixed greens

1 mango, cut into strips

1 apple, cut into strips


2 tablespoons of  olive oil

1 teaspoon of red wine vinegar

¼ teaspoon of dijion mustard

salt & pepper to taste

 Naan Bread

1 pc. Naan bread (cut into cubes)

½ oz. olive oil

salt & pepper to taste

Curried Walnuts

1 oz grape seed oil

2 teaspoons granulated sugar

½ teaspoon curry powder

2oz walnuts

1.Combine the yogurt, ginger, garlic, cardamom, curry powder, salt and pepper, and sliced chicken pieces in a plastic bag and set aside to marinate for 45 minutes

2. Slice the mango and apple into approx. 2” x ¼ x ¼ in.pieces and set aside

3. In a separate bowl mix the vinaigrette ingredients together, slowly whisk in the olive oil and set aside

4.Break the naan bread into bite size pieces and drizzle with oil and salt and pepper

5.Bake the bread in the oven at 375 degrees for about 5 minutes or until golden brown (watch it carefully) and toss periodically for even cooking

6. Toss the walnuts into the grape seed oil and sprinkle with sugar and curry powder and set aside

7.Place the chicken on the grill until the meat is white and throughly cooked, to create crisscross grill marks, grill the chicken following the 10 o’clock – 2 o’clock pattern

8. Assemble everything on a plate, serve and enjoy!
