The ultimate day of the expression of love is upon is once again. A day that many couples anxiously prepare for, with a desire to impress their significant others and a day, that those pining for a valentine of their own deem “Single Awareness Day”. With the holiday landing on a weekend this year, what a better way to spend it by sleeping in a bit and waking up to love – or – chocolate pancakes with chocolate sauce, strawberries and bananas, which are pretty much the same thing right?
Chocolate Pancakes with Chocolate Sauce, Strawberries & Bananas
1/3 cup granulated sugar
1/3 cup cocoa powder
1/3 cup light-brown sugar
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup whole milk
1/2 cup low-fat buttermilk
2 large eggs
3 1/2 Tbsp vegetable oil
1 1/2 tsp vanilla extract
butter for griddle, if needed
fresh strawberry and banana slices
Chocolate Sauce of choice
1.Preheat an electric griddle to 350
2.In a mixing bowl whisk together the granulated sugar & cocoa & stir in brown sugar, flour, baking soda and salt
3.In another bowl whisk together milk, buttermilk, eggs, vegetable oil & vanilla
4.Pour wet mixture into dry mixture (be sure not to over mix)
5.Pour mixture on to griddle making a circular form, allow to cook until bubbles appear on the surface
6. Flip and allow to cook until done.
7. Serve fresh off the griddle, topped with chocolate sauce, strawberries and bananas.
