Since 2012, the landscape of food trucks has shifted from a nomadic gourmet treasure hunt to legitimate food enterprise. Nowadays, many trucks rely on pre-paid catering opportunities and special events. Food truck catering is such a large part our industry that it is competing with ‘traditional’ catering for many of the same events– corporate functions, weddings, birthday parties or any opportunity where people can bring “food trucks into their lives.”

 

The industry is only five years old and we are already seeing a handful of brands expand much farther than street service and catering. The Lime Truck out of Orange County/Los Angeles has expanded into two brick and mortar restaurants, with a third location coming soon. Food trucks like Coolhaus have franchised nationwide and are even expanding into grocery.
