Cartel Taco is the first project by the Cartel Street Food Company, rolling obsession of its three founders and their collective forty years of restaurant life. Cartel Taco specializes in hand-making Korean fusion tacos, using top quality meats prepared in the traditional Korean style of Bulgogi. Using grass-fed, free range beef ribeye from Pemberton Meadows Farm and free range pork from Fraser Valley Farms, our meat is marinated and braised before being barbecued and served quickly to order on tortillas with finely chopped onion & cilantro accompaniment. All Cartel ingredients are made or sourced locally, including our kimchi and hand-made corn tortillas (safe for gluten-free diets), and our amazing salsas are prepared from scratch daily in the Cartel kitchen. As a vegetarian option, we'll soon serve an excellent locally-made organic tofu & mushroom taco, prepared in spicy chipotle-tomato marinade.
Literally 'fire meat'. Sweet, juicy, tender beef (or pork) marinated in soy, chili, sesame oil, brown sugar & spices. We may have added a couple of other ingredients.
A traditional Korean accompaniment usually made of cabbage marinated with fermented chili peppers. Kimchi has crunchy texture and vibrant flavour, and is super rich in vitamins, healthy bacteria and antioxidants. Available in dozens of varieties, kimchi's considered one of the world's healthiest foods, but we love it most for how delicious it is!
