Chaac Mool is a family business run by Maria de la Luz and Luis Vazquez that serves regional Mexican, indigenous and Pre-Hispanic cuisine. We began 6 years ago, operating informally out of our home in the Tenderloin. We formalized in 2008, joining La Cocina’s incubator program. Our new trailer provides an incredible opportunity to grow and introduce San Francisco to the stories and history through their food.
We use generational recipes:
Our signature cochinita pibil, brought from the Yucatan and inspired by owner Luis Vasquez’ grandmother, is a slow-roasted Niman Ranch pork, dry-rubed with Achiote and Yucatecan spices.
