It’s no secret that healthy and Southern cooking don’t generally appear in the same sentence, but five years of research and experimentation have culminated in the use of an air fryer that gives food a crispy crunch without immersion in oil, removal of grease from sauces and gravy, extraction of much of the starch from potatoes, and the use of fresh, high-quality food products. Cooking is speedy, too - It’s not unusual for an order to be ready when customers reach the window!
Committed to being environmentally conscious, the SoKoFood truck is experimenting with using alternative power sources to operate some of its equipment in hopes that some day it can be totally reliant on solar energy.
