The Fat Truck was inspired by Chef J. Fresco’s admiration of the modern cookery movement, Molecular Gastronomy or as he would call it, MoGa. He has studied the techniques and styles of many well-known chefs doing the same – Ferran Adria, Heston Blumental, José Andres, and Juan Mari Arzak. Of these, Chef J. Fresco is a devoted follower of Heston Blumental from The Fat Duck in London. So just as Mr. Blumental has made his mark in the culinary world, Chef J.
