Bao Bao is about as authentic as bao carts come - the dream project of a couple that met in China (where he was teaching English) and moved back to Portland, the cart was conceived from necessity. Together they observed a severe lack of authentic Chinese options in downtown Portland, and sought out to remedy that. Traveling back to China to learn the fine art of baozi from the masters, the couple honed their craft before launching Bao Bao.
