The menu sports an eclectic mix of traditional New Orleans fare. Of course, they serve gumbo and jambalaya – what self-respecting NOLA truck wouldn’t? – and both dishes are seasoned up with that classic mix of aromatic spices, herbs, and veggies responsible for the intense flavor of cajun cuisine.
