What is your favorite dish on the menu?

It’s almost impossible to pick just one favorite — I genuinely love all of our wood-fired pizzas because each one brings something different to the table. But there are a few crowd favorites that always stand out. For meat lovers, I always recommend “The Butcher.” It’s bold, hearty, and perfectly balanced — red sauce, melted cheese, crispy bacon, Canadian bacon, and pepperoni, all blistered beautifully in our wood-fired oven. It’s the kind of pizza that satisfies every craving at once. For vegetarians, “The Sounder” is a go-to. With red sauce, cheese, mushrooms, black olives, green peppers, and red onions, it’s colorful, flavorful, and incredibly satisfying — even meat lovers find themselves reaching for another slice. If you enjoy garlic butter-based pizzas, my personal favorite is “The Big G.” The garlic butter sauce, tender chicken, onions, and creamy gorgonzola create an incredible savory base, finished with ranch and buffalo drizzle for just the right kick. It’s rich, indulgent, and completely addictive. And for BBQ sauce lovers, “The Lolo” is hard to beat — barbecue sauce, chicken, bacon, red onion, jalapeños, pineapple, and fresh cilantro. It’s sweet, smoky, spicy, and fresh all at once — a perfect example of how bold flavors come together in a wood-fired oven. Honestly, you have to try them all — and I can almost guarantee you’ll walk away with more than one favorite.

The name Cascadia is inspired by the Pacific Northwest region known for its natural beauty, craftsmanship, and appreciation for quality ingredients. The Cascadia region represents a culture of authenticity, simplicity, and respect for tradition — values that guide how we approach food. Just as the Pacific Northwest blends rustic charm with modern creativity, Cascadia Food Truck blends traditional wood-fired pizza techniques with a contemporary, approachable experience. Our 72-hour fermented dough and Italian-imported oven reflect our commitment to doing things the right way — patiently and with purpose. Cascadia represents quality, craft, and community — which is exactly what we aim to bring to every event we serve.

Why did you decide to start your business?

We started Cascadia because food has always been about connection for us. Some of life’s most meaningful moments happen around a table — weddings, school events, family celebrations — and pizza has a way of bringing everyone together. I wanted to build more than a food truck. I wanted to create experiences that become part of someone’s story. When we cater a rehearsal dinner or a neighborhood event, we know we’re serving on days people will remember for years. Cascadia was born from a passion for great pizza, craftsmanship, and community — and from the desire to turn simple gatherings into unforgettable moments.
