Real, honest-to-God Peruvian ceviche is a hard art to master, let alone master on four wheel, but hard is apparently nothing for Cevicheria Incaínos, which has some of the best regarded ceviche on the whole island - drawing hundreds to its purple truck for their daily fix. White fish, shrimp, octopus, calamari or a finely-tuned mix of all three are offered up for your ceviche of choice, but the menu doesn't end there.
Fish tacos and rice dishes are also on hand to satisfy serious cravings, along with pastelillos stuffed with your choice of beef, chicken or fish. Combo plates round out the options, so no matter what kind of hunger you bring, you'll be covered. For all those who appreciate a fine art, track down Cevicheria Incaínos, and consider yourself part of the museum. Thankfully there's a lax food policy at this museum.
