Adil Chokairy grew up in France, where he spent summers working for his father’s transportation company and subsisting on a steady diet of his mother’s homemade crepes. As he knew the ins and outs of how to run a business, it’s no surprise he gravitated towards sales and marketing as a career later in life. He quickly got into the banking industry after moving to New Haven, CT with his wife. However, the corporate life left him feeling unfulfilled. Reflecting on his childhood, he had an epiphany – combine the business expertise he learned from his father with the crepe-making skills he learned from his mother. That brilliant notion birthed Crêpes Choupette. Now, you can catch this little cart popping up around the community frying up light, flaky crepes. The menu sports both sweet and savory varieties of this Parisian classic. The savory crepes are made from 100% organic buckwheat flour and come stuffed with fillings perfectly paired together to create mouth-watering flavor profiles. Try a full-bodied blend of mozzarella, tomato, and basil. Or, sample all things creamy and smoky with a crepe stuffed with brie, gouda, and bacon. As for the sweeter side, Adil makes his saccharine crepes with whole wheat flours and fills ‘em with a whole range of decadent ingredients. A crepe stuffed with Nutella, banana, and strawberry?
