What is the story behind your business' name?

My father was Cuban, and my mother was Irish. My wife's family is Irish; therefore, we are Cubish.

Cubish dares to go where no food truck has gone before, offering up a fusion of flavor from two very different islands. Combine the spicy flavors of Cuba with hearty meals of the Irish and what do you get? Cubish. Get used to the name, Albuquerque, because you'll be hearing it all over the streets.

Classic Cuban staples are offered alongside their homemade Irish mashed potatoes for the meat and potatoes kind of guy in all of us.
