Rosario Ulloa started El Indio in 1996 at a soccer park in Palmetto, FL, selling homemade Matamorros-style snacks from coolers to support her family. Her tacos quickly became a local favorite, winning over players and the community. Today, her legacy lives on through her son Miguel, his wife Yesenia, and their son JJ, who run the food truck and catering business with the same beloved family recipes.
