The inspiration for Fire and Rice came from Chef Paul Schmidgall’s time in Europe, where he lived and studied for years. It was here he fell in love with all things paella. Upon returning to Norwalk, CT, he decided to bring the most authentic possible iteration of this Spanish classic to the United States.
