The inspiration for Fire and Rice came from Chef Paul Schmidgall’s time in Europe, where he lived and studied for years. It was here he fell in love with all things paella. Upon returning to Norwalk, CT, he decided to bring the most authentic possible iteration of this Spanish classic to the United States. Paella is known for its powerful flavor, which can be attributed to the aforementioned fragrant seasonings. From garlic to parsley to saffron, all that’s sprinkled on the rice, meats, and veggies that go into these dishes is packed with a powerful taste.
