About Fireflour Pizza
Kenny and Kendra Howard, long-time admirers of Neapolitan pizza, always dreamed of opening their very own pizzeria. In 2012, they did just that with Fireflour Neapolitan Pizza. Now, they operate both a food trailer and brick and mortar location. Using an oven hand built in Naples, the pair bring a little taste of Italy to Bismarck, ND with pies made according to custom.
The name Fireflour is a nod to the two most important components when it comes to pizza. The Howards make their dough from scratch, fermenting it for 48 hours to ensure top-notch flavor. Then, these delectable pizzas are wood-fired at 900 degrees for only 60 to 90 seconds. When they pull ‘em out of the oven, expect some bubbling melted cheese and crisp-on-the-outside, chewy-on-the-inside crusts. Pizzas come topped with a wide range of ingredients. Meat-lovers will enjoy pizzas smothered in pepperoni and fennel sausage. There’s no shortage of choices for the non-carnivorous, however, with the menu serving up plenty of earthy pies smothered in mushrooms, basil, and more.
