Well, first we'll say this: they've doing more with a tostada than any taco truck we've ever seen. Because they're not just keeping to tradition, they're reinventing it with a host of unique ingredients and inspired recipes. Their Chipotle tostada is everything you've come to know a tostada to be, starting with a crisp tortilla, a base of refried beans, and piled high with a chicken or pork marinaded in tinga, cilantro, cabbage and radish with an avocado tomatillo drizzle.
