What is your favorite dish on the menu?

Of course the Pasta Tricie... it has my name. It's just everything comforting. It's creamy and warm and a bit spicy with peppers and chicken and sausage. It just feels like a warm hug.

What is the story behind your business' name?

We owned a restaurant back in 2012 and thought....Man, if we had a food truck, we could go anywhere and work. We can serve gumbo on the go... I was like, hey, I like that name Gumbo to Geaux... So, we trademarked the name and it's been working ever since.

Where did you learn to cook?

My grandma Sadie was the best cook I have ever known. I grew up with her, just hanging out in the kitchen and learning to cook, learning stories, and just little techniques to make things that you can only learn by experience. I went to culinary school for the degree, but my grandmother is the reason I am the chef I am today.

Why did you decide to start your business?

Cooking is what I do. It makes me feel happy and close to my grandma. When I am standing in the kitchen with all those ingredients, just watching it go from raw ingredients to a composed meal that people are fascinated with makes me feel good. It is what I was made to do. I once heard do what you love and then figure out how to get people to pay you to do that. That's what I did.

Who encouraged you the most to start your own business?

My kids... I wanted my children to see that they can do whatever they decide to do. The only limits to your life are the ones you set yourself. It takes a different kind of courage to own your own business and have others depend on you to provide for their family. It's a different pressure and responsibility. I like it. I wanted my kids to see that their dreams are valid and with hard work, they are possible.

What's your favorite event that you've catered for?

Each event is special in its own way. If I had to pick, I can say it's a clear tie between two weddings: The LeBlanc Wedding and the White Wedding. I can honestly say both these weddings were so much over-the-top fun. If I could freeze time, I would stay in these moments forever. I was once told by a friend that their next event is their favorite, and yes, there is something to say for that, but those two weddings are fixtures in my happy memories forever.
