Wild pig meat was the first meat to be jerked in Jamaica. Our locally sourced pasture raised pork meals are available in whole loin, chops and shoulder and ham roasts. The meat is brined then marinated in our specially blended Jerk marinade
Chicken is a very versatile meat and is served with our salads, as an appetizer or small food, and as an entrée. Our pasture raised chickens are prepared in the same manner as our pork and are available as whole birds or parts
Wild caught fish is lightly marinated in our jerk seasoning and grilled on a wood plank or flame broiled
Whole fresh birds are prepared in the same manner as all our other jerk meats. Special care is taken to avoid serving dry meat by roasting the birds at a very low temperature thus keeping the meat moist all the way to your plate. Our turkeys are usually special ordered and require at least a week's notice prior to your event
Ital Veggie Stew
A medley of specially selected fresh vegetables is seasoned, and simmered down in curry and coconut milk, resulting in a delectable stew.
With bursting flavors of romaine, field greens, cucumbers, grape tomatoes, and cranberries drizzled with a homemade recipe of red wine vinaigrette. Optional ingredients: crushed walnuts or roasted pecans and feta cheese
Whole Roast Pig
One of our specialty is roasting Whole Pigs. Unlike traditional whole animal roasting techniques, with our patented stainless-steel Roaster we can roast a pig as small as a 30-pound suckling up to a 160-pound hog in half the time as traditional roasting methods. You can rest assured that the meat will be quite succulent and that’s a guarantee. We cater events from as few as 30 guests to large parties of hundreds. We can customize the roasting to serve either sliced or pulled meat according to your linking and we roast only locally sourced premium pasture raised pigs that are never frozen.
This is a party favorite of many. Like all our jerk fare whole chicken wings are marinated and baked at low temperature. Our wings are never fried
Ripened plantains are always a crowd favorite that can be enjoyed as an appetizer by and pairs well with our Jerk fare. We are a big fan of coconut and avocado oil
Rice and Peas
A delightful combination of red kidney beans or pigeon peas and rice, simmered in a mixture of coconut milk, thyme and pimento. This is the standard Jamaican starch that is served with our meals and can also be ordered in large quantities for your onsite event. This is often consumed as a vegetarian meal sans meat or fish.
