Founder Phillip Lee always had a deep-seated passion for Korean food, so much so he felt it was just a little bit superior to other country’s cuisines. Sure, Mexican, Italian, and Japanese food packs some punch, but does it really hold a candle to the bold flavor of Korean fare? Phillip certainly didn’t think so, and he wanted to make Korean eats accessible to everyone. With that, Kimchi Taco was born, and it didn’t take long for this business to become a beloved staple of the New York City food scene. It started out as a food truck, but has since expanded into a popup, catering company, and brick and mortar restaurant. That rapid-fire growth should tell you something about the quality of these eats. Given the name, it’s unsurprising every dish here comes served with kimchi. Korea’s greatest superfood, kimchi boasts an impressive array of health benefits: it’s a good source of fiber, low in calories and fat, loaded with vitamins, and packed with good bacteria great for gut health. More importantly though, it’s tasty. Very tasty.
