Slow Smoked Pulled Pork

We use a blend of Apple, Pecan, Oak, and Hickory to slow smoke our pork until it is deliciously tender with the perfect amount of smoke. We offer it as a plate or on a Brioche bun. Sauce served on the side. (This item is GF if chosen without the bun)

!2- hour Texas Brisket.

Simply seasoned with Kosher Salt, Black Pepper, and Garlic and then smoked low and slow until the perfect "bark" forms to seal in all the juices, resulting in "Smoked Perfection" You don't need sauce, but we'll provide it you insist. Served as a plate or on a toasted brioche bun. (Can be a GF option if Chosen as a plate)

Slow St. Lois style Smoked Spareribs. -GF

We rub these ribs with the perfect balance of spices and slow smoke using Cherry, Oak and Pecan wood. These ribs are meaty, smokey, sweet, and delicious! - GF

Marinated and Smoked Boneless Skinless Chicken Thighs

Delicately seasoned with Salt, Pepper, and Garlic and smoked with Apple, Oak, and Pecan wood and then finished on the Char-Grill over "Live Fire", Can be ordered as a plate or on Toasted Brioche Bun. (Can be a GF option if chosen as a plate)

House Fried Corn Chips with Queso, Fresh Pico De Gallo, Fresh Jalapenos, Lime Crema, House BBQ Sauce and choice of meats.

Brisket Burnt End Dog

Un-Cured Smoked Sausage Dog made with Brisket Burnt ends. Can be served as a traditional oversized hot dog or stand-alone Texas sausage. -GF if no Bun!

Brisket Burnt End Jalapeno Sausage

A fusion of the "Burnt Ends" of Brisket and Jalapenos made into a great Un-Cured Sausage Served with Texas Toast.

Sides

Crispy Brussels with Balsamic Glaze.

Cole Slaw

We make our dressing in house like any true BBQ enthusiast would and made fresh daily so it's crisp and tangy with a touch of sweetness. -GF

Mac and Cheese

Homemade 3 cheese sauce and and pasta, that's it. The difference is, we don't mix the two until you order it! So Good!

Smokey BBQ Baked Beans

We use our House BBQ Sauce to make our Truly Southern BBQ Baked Beans! -GF/Vegetarian

House cut Fries

We hand cut our own Russet Potatoes and then blanch them before we fry them to a golden crisp! This is the difference in an "okay" frozen fry and our delicious hand cut fries! We sell hundreds of pounds a week of these golden jewels!

Fresh baked mini Pecan Pies or Chess Pies

We make the best Pies around! Sweetened to Perfection and just enough to not feel guilty for indulging!

Chocolate Lava Cake

Simple Molten Lava Chocolate cake oozing with warm chocolate sauce with a moist cobbler consistency.

What is the story behind your business' name?

We wanted to be known for using "wood and fire" to cook our meats. It is not the most efficient, but we think if you are going to serve BBQ, It should be primal and scratch-based preparation.

Speaking of the owners, Chris and Greg, they’ve got a combined 55+ years of experience cookin’ up colossal pieces of meat for magical occasions. Whether it’s an outdoor food festival or concert, a backyard wedding, a birthday bash, or a high-end corporate gathering, they have the meat and means to make your day a delight.
