Maddy’s Cream Bike was inspired by my daughter, Maddy — the joy behind everything I do. When she was just a baby, I wanted to build something that captured the same sense of wonder, warmth, and connection that she brought into our lives. The idea started simple: to spread a little happiness, one handcrafted ice cream sandwich at a time. We named it Maddy’s because it reflects the spirit of childhood joy — that feeling you get when the ice cream truck rolls by or when you share a treat with someone you love. Great question! I’ve always loved to cook, but honestly hadn’t done much baking until I started Maddy’s Cream Bike. I learned to bake all of our cookies completely from scratch. When I first started Maddy’s Cream Bike, I knew the ice cream sandwiches had to taste as good as they looked — so we spent months in my kitchen testing, tweaking, and perfecting every recipe. There were plenty of late nights, a lot of butter, and even more love. Each cookie you taste today is the result of countless small adjustments and “taste tests” (my husband and daughter didn’t mind being my official tasters!). Our goal was to create cookies that stay soft, chewy, and perfectly balanced with the creamy ice cream inside — and we finally did it. Every sandwich we serve is made with that same homemade spirit and care that started it all.

I’ve always had a heart for small business. My background is actually in the tech startup world — I’ve spent years as a finance executive helping companies grow and scale, which I love.
