What is the story behind your business' name?

My mother is the inspiration of my Food truck, she taught me all I know in the kitchen and inspired all of recipes. She was the original "Mama D". My maiden name was DiCosola and as I got older, I soon took on the name "Mama D" as well with my friends. My mother past Feburary 2021 unexpectedly and we were suppose to take on this venture together. I still moved forward with starting the Food Truck honoring her and all she has taught me.

Starting with a dream and resulting in a food truck, Mama D’s Authentic Kitchen was made possible by the perseverance and passion for food from owner Amanda Moran. Serving the folks around the Medford, OR region, Mama D’s specializes in Italian favorites with a Chicago flare. Try one of their hot sandwiches like the Chicago Italian beef or the chicken marsala sandwich. The French bread pizza is a favorite, which features their own homemade marinara sauce.
