What is the story behind your business' name?
Our name, Parilya, has a story as rich as our food. It's inspired by the Spanish word "Parilla," meaning grill. When Spain colonized the Philippines, their language intertwined with our own, and "Parilla" evolved into the Filipino understanding of open-fire cooking. For us, the name Parilya is a tribute to that history. It perfectly captures our cooking philosophy: honoring the traditional Filipino method of cooking over an open flame, where the fire is not just a tool, but the main ingredient.
