Poco India is quite the unique vendor in Portland, OR. It's a food cart at Cartlandia, but really the reason we're writing about 'em is because they're serving Mexican-Indian fusion meals. It's quite the delicious feat, if we do say so ourselves. But Poco India makes it look easy, utilizing only the freshest quality ingredients that are equal parts local, organic and nonGMO in each and every meal. Plus, each is customizable to ensure a palate pleasing experience. Choose between their big ol bowl', burrito, tacos or enchilada plate, and from there, fill 'er up to your liking; Poco India's got tandoori chicken, paneer and spicy pork to pig out on, with either traditional Mexican or Indian basmati rice with toppings like spicy pinto and organic black beans in tikka masala and green spicy enchilada sauce. Sounds amazing, right? We thought so. Track down Poco India in Portland, or better yet, book 'em to cater. Either way, this is one foodie experience you don't want to miss.
