We just wanted something that in a word evoked the essence of Baja California, which for us is surf and fresh seafood.

About Rosarito

Rosarito is giving Austin, TX not one, but two opportunities to try out Baja Californian eats on the streets. They've got a taco truck and a ceviche truck, taking over the street food scene with delicious meals at every turn. At Rosarito, they've diversified the menu to include a myriad of mouthwatering influences. As it turns out, the Baja Taco is a natural fusion of two culinary traditions, blending Mexican pacific seafood with Japanese spices and tempura style cooking. Get battered white fish tacos loaded with steamed rice and refried black beans, or try out their specialty battered calamari rings topped with pickled red onions. Not to mention their octopus ceviche swimming in a sweet and spicy habanero/orange dressing with pineapple and avocado in the mix.
