When Eric and Sabrina decided to pursue cooking professionally, they left their home of Minnesota and traveled the country honing their skills. Making their way through the West Coast, they noticed an abundance of Thai restaurants but little representation of their Laotian roots. Eventually, they traveled to Thailand and Laos to hone their cooking skills. Once their soul searching journey was over, they returned to Minneapolis, MN with a single goal in mind – ensure Laotian cuisine was represented in the city’s otherwise eclectic food scene. With that, Soul Lao was born. Foodies across the city don’t want to miss this truck.
Eric and Sabrina use only seasonal ingredients to ensure each item on the menu is packed with bold flavor. They serve up a variety of traditional Laos dishes. You can sample some rotisserie chicken marinated overnight in a rich blend of lemongrass, oyster sauce, and fish sauce. Love noodles? Try the khao piak sen and enjoy some hand-cut tapioca noodles served in a chicken-based broth packed with garlic, cilantro, and green onions. Want to try something new? They have crispy chicken feet coated with a top secret seasoning loaded with savory flavor. Eager to try this international fare? Then either stop by Soul Lao or book ‘em for your next event. This mouth-watering spread of international cuisine is bound to leave guests impressed.
Pho Lao — Oxtail roasted for 24 hours so it’s tender and dripping with juice served in a thick bone marrow broth along with beef flank, meatballs, basil, cilantro, and bean sprouts.
