Taste of Louisiana brings the spirit of New Orleans to Fort Worth with a food trailer packed full of Cajun classics. After 35 years as a Merchant Marine and Chief Steward, the chef behind the trailer decided it was time to share his passion for Louisiana cooking with the community. Every plate carries the flavors of the Big Easy, from rich jambalaya and seafood gumbo to crispy Cajun fried catfish, shrimp baskets, and po' boys piled high with Southern charm.

The menu offers comfort and variety, including red beans and rice, dirty rice, chicken tenders, loaded fries, and wings with Cajun spice. For something different, guests can try Joe’s Spicy Burger, Cajun balls, or a catfish and shrimp combo that delivers all the flavor of a New Orleans kitchen on wheels.
