Though the Elephant Shack closed the doors to their brick-and-mortar, the shuttering didn’t stop them from coming back to life in truck form. The Laie-based Thai restaurant is alive and well, serving Thai comfort fare to a fiercely loyal following on Oahu.
From the extremely well-known classics like Pad Thai with a specialty house sauce and Panang Curry with galangal (a ginger-ish root), to the less well known hits like Yum Pla (fried fish tossed in chili-lime jus) and Yum Gai Yang (grilled marinated chicken), you simply can’t order the wrong thing. Specials rotate too, and it’s always nice to get your hands on something with fish — this is Hawaii after all, and the ocean is full of the fresh stuff. Yum Gai Yang — Grilled marinated chicken tossed in a fresh lime-cilantro jus, with green papaya, grape tomato, mint, lemon grass, and shallots over jasmine rice. If your mouth isn’t watering just reading that, you’re not human.
