Aubry Walch spent over a decade creating meat-free alternatives to the meat-centric dishes of her hometown in Guam, so when she teamed up with her brother Kale—a meat-eater-turned-vegan—to start a vegan food truck in Minneapolis, the two were able to harness both a substantial knowledge of meat alternatives and a recognition of what real meats taste like. Together, they are the creative forces behind The Herbivorous Butcher.
The truck’s impressive lineup of “meats” and “cheeses” are something to behold, and because of them, the idea of a hefty vegan deli sandwich is no longer a myth. There’s a staggering amount of options here, ranging from classic deli “meats” like pastrami and capicola, to specialty “meats” like Korean-style ribs and andouille sausage.
