Meet Jim and Beth Bailey
What is the story behind your business' name?

Growing up in rural Alabama, I learned that if you were sassy and a bit of a smarty pants, you were affectionately called a "heifer." Well, I am undoubtedly a heifer! And if you were a growing boy or a grown man with a hearty appetite, you were a "hog," much like my husband. This playful dynamic inspired the name of our business and the spirit of our menu.

The Hog and Heifer is a Southern-inspired food pop-up based on heart, humor, and homemade flavor. Launched in August 2024 after a career shakeup, this passion project turned food venture is led by a proud Alabama native who brings sass, soul, and serious flavor to every dish. The name—born from playful Southern nicknames—reflects both the spirit of the kitchen and the appetite of its fans. At the center of the menu is the hot ham and cheese sandwich: toasted, melty, and finished with house-made Heifer sauce for a kick that’s all its own. You’ll also find crave-worthy favorites like the chicken roll-up and a Southern-style Philly Cheesesteak wrapped in a flour tortilla with steak sauce and a whole lot of comfort. Every sauce is crafted from scratch, and the lemonade? It's just as memorable as the food. The Hog and Heifer isn’t just about serving great sandwiches—it’s about sharing a story of resilience, creativity, and Southern grit, one bite at a time.
