
As Matt Clayton’s buzzy plant-based restaurant J. Selby’s began to grow in popularity, it wasn’t long before his customers started begging him to open a truck. Lucky for us, that’s exactly what he did. An offshoot of the original, the J. Mobile is serving the same vegan comfort classics that the people of Minneapolis have grown to love.
