Trinity Kitchen is giving the Southwest a little taste from the South. No, it's not redundant, because in a place like Santa Fe, New Mexico, it's hard to find authentic Cajun cuisine. But all that changed when Trinity Kitchen blazed onto the food truck scene, with a chef born and raised in Louisiana who's importing tradition in every savory dish.
Eliot Chavanne, the mastermind behind Trinity Kitchen, started his illustrious culinary career by working in his cousin's southern restaurant, learning the tricks of the trade and the secret in the sauce, cultivating his passion for regional cuisine. But when he moved to Santa Fe, he noticed the lack of soul food. Thus, partnered with the immersive art experience that is Meow Wolf, he brings the experience and passion from back home to his new home. And it shows. From po'boys and gumbo to fried chicken and waffles, boudin, and beignets, the menu's full of hearty meals that have that stick to your ribs quality. What's more, each is made using only the freshest quality ingredients, locally sourced when possible, with a promise to hand craft everything from scratch. If that's not enough to get you to visit, well, we don't know what else to say. So we'll say this: if you're cravin' Cajun, get out on the streets of Santa Fe and treat yourself today. You deserve it.
