Eliot Chavanne, the mastermind behind Trinity Kitchen, started his illustrious culinary career by working in his cousin's southern restaurant, learning the tricks of the trade and the secret in the sauce, cultivating his passion for regional cuisine. But when he moved to Santa Fe, he noticed the lack of soul food. Thus, partnered with the immersive art experience that is Meow Wolf, he brings the experience and passion from back home to his new home. And it shows. From po'boys and gumbo to fried chicken and waffles, boudin, and beignets, the menu's full of hearty meals that have that stick to your ribs quality.
