Tom D’Ambrosio started out whipping up gourmet burgers for patrons across Phoenix, AZ, but always wanted to expand his culinary repertoire into new, challenging territories. He did just that with a brand new food truck, Modern Tortilla. Here, Tom and his classically trained team whip up a bounty of Mexican eats that incorporate a little bit of Southwestern flavor. While most taco trucks have options for stuffings, few offer the sheer magnitude of choices that you’ll find here. There are 21 types of toppings, 4 types of meat, and 3 types of tortilla. This provides a pretty much endless array of options for mixing and matching. You can, say, grab some slow braised pork smothered in a robust achiote marinade served up on a corn tortilla. Or, try a burrito made with a cilantro-lime tortilla stuffed with lime-flavored cod for a double whammy of citrusy flavor. Inspired? Then give your guests the chance to custom create their own masterpieces by booking with Modern Tortilla. Given this is the taco truck to end all taco trucks, it’s a surefire way to please a crowd. MUST TRY Beef Skirt Steak Taco — Thin, tender grass-fed skirt steak served up on your choice of tortilla with your choice of toppings.
