What is your favorite dish on the menu?

With so many flavors to choose from, it’s honestly hard to pick just one, but if I had to, I’d say our Strawberry Milkshake paleta (Fresa de Leche) is definitely a standout. It’s made with real strawberries and creamy milk, giving it a rich, nostalgic flavor that’s both refreshing and comforting. It’s simple, classic, and always a hit with our customers, and one I personally never get tired of.

What is the story behind your business' name?

Paleta Factory was born out of our original business, Razpachos. During the early days of the pandemic, we had to pivot quickly, so we launched online ordering for paletas to meet the new demand. As orders grew, we acquired a small warehouse to expand production. The space had once been a factory, and as we sat there brainstorming names for this new chapter, the answer was right in front of us. "Paleta Factory" just clicked, it was simple, clear, and perfectly described what we were building: a place where handcrafted paletas are made with care and tradition.

Where did you learn to cook?

I traveled to Mexico specifically to take a class that taught me how to make traditional paletas and ice cream. That experience gave me a solid foundation, and from there, I spent years perfecting the recipes through hands-on work and experimentation. Last year, I took it a step further by completing the Ice Cream Short Course at Penn State University, which gave me deeper technical knowledge and helped elevate my craft.

Why did you decide to start your business?

I wanted to share a piece of our culture through paletas and ice cream: vibrant, handcrafted treats that are full of creativity, flavor, and tradition. At the same time, I had developed a wide range of skills over the years, from operations, marketing, and product development to finance and technical expertise from my background as a programmer. I saw an opportunity to bring all of that together and build something of my own. Starting this business allowed me to create something meaningful that not only reflects my roots but also connects with people in a fun, delicious, and memorable way.

Who encouraged you the most to start your own business?

It was a combination of personal drive, family support, and the inspiration I found in other family members who had built successful businesses of their own. I’ve always wanted to create something of my own, and having the chance to partner with family made that vision even more meaningful. Their encouragement, belief in my abilities, and the example they set gave me the confidence to take that leap and turn an idea into a business.

What's your favorite event that you've catered for?

One of our favorite events was when the City of Chicago hired us to provide thousands of paletas to attendees waiting in line to enter the Taste of Chicago. It was a hot summer day, and people were standing under the scorching sun, so handing out refreshing paletas felt like the perfect way to welcome them. It was an incredible experience to be part of such an iconic event and to see the smiles our paletas brought to so many faces.
