When our family started this business, we noticed that most taco trucks offered the same familiar flavors. It was difficult to find Mexican food that truly reflected the flavors and traditions of our hometown, Mexico City. As we cooked for family, friends, and our local community, we realized that even many fellow Mexicans weren’t familiar with some of the unique dishes from Mexico City’s vibrant culinary scene. With Arturo Rodriguez—our head chef and owner—bringing over 30 years of restaurant experience from working with various establishments in the Boulder area, it felt natural to take this next step. Introducing our community to authentic Mexico City cuisine became our mission, and managing the business behind the scenes was second nature. Our goal has always been simple: to share high-quality, authentic flavors that connect people to the heart of our culture.
