What is the story behind your business' name?

Our business name, Windol's, is a nod to where it all began. Right before COVID, Joe was rising in the kitchen world and Windy was figuring out her next move after a big relocation from her home state of Louisiana. We met just before everything shut down and had to start from scratch together while being separated on opposite coasts. Windy’s friend Terri always called her “Windle”—so much so that people genuinely thought it was her real name. She was visiting Terri's family in Colorado during the shutdown and that's where our story begins. After hearing this every day via facetimes and screen connections during covid, Joe was enamored by the name. To this day, the nickname sticks, though Joe insists on spelling it Windol. After tossing around name after name, we landed on Windol's—a fun, personal reminder of the bond we built during one of the hardest times in our lives.

Where did you learn to cook?

Joe graduated from Valencia with a culinary degree. He has seen many kitchens in his 13 years in the food industry. He had humble beginnings in fast food, and quickly moved through a myriad of cuisines and dining styles. While he may have years of experience, his favorite kitchen is his own. This is where his creativity shines, and he is able to serve his family and friends downright DELICIOUS food.

Why did you decide to start your business?

We had a slight catering mishap on our wedding day. Our catering company provided an ice cream bar, but we watched our family and friends struggle to scoop their own ice cream. I was mortified!! We realized that we could take our shared passion for ice cream and bring some serious happiness to the world through our kitchen and event planning skills.

Who encouraged you the most to start your own business?

We love working towards big goals as a couple and we both are extremely hard workers and love grinding out plans to make our dreams a reality!

What's your favorite event that you've catered for?

We loved celebrating a graduation party! We were able to go all out- custom stickers, custom flavors. It was insanely cool!!
