What is the story behind your business' name?

Chef Sandoval was born and raised in Honduras. In Central America everyone knows people from Honduras as Catrachos which is a term that comes from a Honduran historical figure named Florencio Xatruch from the 1800's. Our name embodies rich traditional flavor profiles while cooking with a slight modern approach.
