Bayou Betty Cajun Express Food Truck rolled out on the streets of Charlotte in December 2018. Creative entrepreneur Locke Mouton developed the Bayou Betty concept naturally. He is the son of a Lafayette native who’s Louisiana roots go back into the Bayou more than two centuries! Locke moved to the Fort Mill/Charlotte area more than a decade ago. He’s been planning to bring his family’s authentic Cajun flavors to his new Queen City home ever since and now Bayou Betty is ready to “Let The Good Times Roll”! Bayou Betty may be one of Charlotte’s newest trucks, it’s also, quite certainly, one its most unique as well. The rolling eatery features a full range of authentic Cajun cuisine including Mama’s dirty Cajun rice, maca-douille, boudin (boo-dan), gumbo, crawfish étouffée and Cajun BBQ. Bayou Betty serves po’ boys too…with authentically amazing favorites like fried alligator, oysters, shrimp, fish, and even cauliflower for the vegetarians. They’ll always have plenty of hot balls too. There’s nothing dainty about Bayou Betty’s balls; they’re big enough to share and are served riding high on a nest of thinly sliced onion rings. Bayou Betty boasts weekly surprises on her menu too. Fresh breads are baked every day. Vegetables are locally sourced whenever it makes sense. Ben Street, owner of Street Fare Farm in Concord, NC. supplies the farm fresh eggs for Bayou Betty. Ben’s pasture-raised hens are fed a local, non-GMO diet so these girls lay the most delicious golden-yoked eggs you’ll ever eat.
