Francisco ”Chico” Mendonça, known as “Chef Chico,” brings an international cooking background to the Orlando area. He grew up in the Azores and developed a love of fresh seafood and beef used in many Portuguese dishes. As an adult, Mendonça moved to Bermuda and perfected classic French cooking at several major hotel restaurants. Most recently, he was a chef at some of Dallas’ finest restaurants, including Clair De Lune and Voltaire. While he was often cooking New American and French dishes for customers in Dallas, Mendonça was also learning Tex-Mex specialties from friends and co-workers in the kitchen. He brings it all together to create a new food truck dining experience.
