I am a Pastry Chef, have been one for over ten years. I wanted to build a brick oven in my back yard to bake bread, however the wife wouldn't have it! I did some research and found a brick oven on a trailer, I flew into Denver to check them out and ended up in a three day Pizza business class. I instantly fell in love with the business! We've been open just over a year, and have our second oven coming in a few weeks! We import everything we can from Italy, from the flour to the prosciutto, and tomatoes. The most important thing to us is making a pizza as close to what you would get in Naples.
